  • 4 chicken breasts (about 600g)
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 200g mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tbsp flour
  • 250ml chicken stock
  • 1 tsp dried thyme
  • 800g potatoes, peeled and cubed
  • 50g butter
  • 100ml milk

Instructions

  1. In a large saucepan, add enough salted water to cover the peeled and cubed potatoes. Bring the water to a boil over high heat. Cook until the potatoes are tender when pierced with a fork (about 15-20 minutes). Drain the potatoes well.
  2. Return the drained potatoes to the saucepan over low heat. Add butter and milk to the potatoes. Mash until smooth; season with salt and pepper to taste.
  3. Season chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium-high heat. Once hot, add chicken breasts; sear until golden brown on both sides (about 5-7 minutes each side). Once cooked through, remove from skillet and set aside.
  4. In the same skillet, add sliced onions, red bell pepper, yellow bell pepper, and mushrooms. Sauté until softened (about 5 minutes). Add minced garlic; cook briefly until fragrant. Sprinkle flour over vegetables; stir well to combine. Gradually pour in chicken stock while stirring continuously; add dried thyme. Allow gravy to simmer until thickened (about 5-10 minutes).
  5. Return seared chicken breasts back into the skillet with gravy. Simmer briefly so that flavors meld together.
  6. Serve hot alongside your creamy mashed potatoes for an unforgettable meal!
