  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • Juice of lemon
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cooked basmati rice
  • 1 cucumber, sliced
  • 1 cup canned chickpeas, rinsed & drained
  • Fresh dill for garnish
  • 1 cup Greek yogurt
  • 1 cucumber, grated & squeezed
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • Optional: pinch of chili flakes

Instructions

  1. Marinate the chicken: Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken and coat well; let marinate for at least 15 minutes.
  2. Cook the chicken: Grill or pan-sear over medium heat for 5–6 minutes on each side until fully cooked (internal temperature of 165°F). Let rest before slicing.
  3. Prepare tzatziki: Mix Greek yogurt, grated cucumber (squeezed), minced garlic, chopped dill, lemon juice, salt, and pepper in a bowl until smooth.
  4. Assemble the bowl: Layer cooked rice at the bottom of serving bowls. Top with chickpeas, sliced cucumbers, grilled chicken slices, and tzatziki. Garnish with fresh dill.
