  • 5 large ripe tomatoes (finely chopped)
  • 2 garlic cloves
  • 1 small green bell pepper (stem & seeds removed)
  • 1 small zucchini
  • 4 large carrots (peeled)
  • 1 small stick of celery
  • 2 tablespoons tomato paste
  • 12 sprigs fresh thyme

Instructions

  1. Heat olive oil in a large pot over medium heat. Add finely chopped onion and caramelize until golden.
  2. Stir in chopped tomatoes and cook until they soften and release juices.
  3. Add garlic and remaining chopped vegetables; cook for an additional 5 minutes.
  4. Mix in tomato paste and thyme, cooking for 2 more minutes before adding water.
  5. Simmer partially covered for about one hour until vegetables are tender.
  6. Blend with an immersion blender until smooth and creamy.
  7. Serve hot, garnished with optional toppings.
