  • 1 large chicken breast
  • 2 medium sweet potatoes, cut into wedges
  • 1 tbsp olive oil (for chicken)
  • 1/2 tsp paprika (for chicken)
  • 1/2 tsp garlic powder (for chicken)
  • Salt & pepper to taste (for chicken)
  • 1 tbsp olive oil (for sweet potato fries)
  • 1/2 tsp smoked paprika (for sweet potato fries)
  • Salt to taste (for sweet potato fries)
  • 1 ripe avocado
  • Juice of 1/2 lime
  • Salt & pepper to taste (for guacamole)
  • 1 cup cherry tomatoes, halved
  • 1/2 avocado, diced (for salad)
  • 1/4 small red onion, thinly sliced
  • 1 tbsp olive oil (for salad)
  • Salt & pepper to taste (for salad)
  • Optional: chopped fresh cilantro

Instructions

  1. Preheat the oven to 200C (400F).
  2. In a mixing bowl, toss sweet potato wedges with olive oil, smoked paprika, and salt.
  3. Spread sweet potato fries evenly on a baking sheet and bake for 20-25 minutes until golden and crispy.
  4. While the fries are baking, season the chicken breast with olive oil, paprika, garlic powder, salt, and pepper.
  5. Grill the chicken over medium heat for about 6-7 minutes per side until fully cooked through.
  6. In another bowl, mash the ripe avocado with lime juice using a masher or fork; season with salt and pepper until creamy.
  7. In a mixing bowl, combine cherry tomatoes, diced avocado, and thinly sliced red onion; drizzle with olive oil and season with salt and pepper. Toss gently.
  8. To serve, layer sweet potato fries first in each bowl, add sliced grilled chicken on top, include a scoop of guacamole beside the tomato-avocado salad, and garnish with chopped fresh cilantro if desired.
