  • 2 large eggs
  • 2 tablespoons melted coconut oil (or vegetable oil)
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 46 tablespoons milk (or apple cider for extra flavor)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a bowl, whisk together the dry ingredients: gluten-free flour, baking powder, baking soda, spices, salt, and sugars.
  3. In another bowl, mix the wet ingredients: pumpkin puree, buttermilk (or milk mixture), eggs, melted coconut oil, and vanilla until smooth.
