Ingredients

  • Coconut cream
  • Coconut milk
  • Pistachio cream
  • Vanilla extract
  • Coconut sugar
  • Kataifi
  • Chocolate
  • Coconut oil

Instructions

  1. In a blender, combine the coconut cream, coconut milk, pistachio cream, vanilla extract, and coconut sugar. Blend until smooth.
  2. Pour the mixture into ice cream bar molds and freeze for about 2 hours until set.
  3. In a skillet over medium heat, toast the kataifi with oil until golden brown, about 5–7 minutes. Mix with additional pistachio cream and set aside.
  4. Remove the bars from molds and fill each center with the toasted kataifi mixture. Freeze for another 20 minutes.
  5. Melt chocolate and coconut oil together in a microwave-safe bowl. Dip each bar in the melted chocolate and place on parchment paper to set.
  6. Drizzle any remaining chocolate over bars and sprinkle with chopped pistachios before freezing again until fully set.
