  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (15 ounces) red kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 32 ounces frozen tater tots
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until softened; add minced garlic.
  3. Brown the ground beef in the skillet until fully cooked.
  4. Stir in kidney beans, black beans, diced tomatoes, tomato paste, chili powder, salt, pepper, and simmer for 5 minutes.
  5. Transfer the chili mixture to a greased 9×13-inch baking dish and layer frozen tater tots on top.
  6. Bake uncovered for about 35 minutes or until tater tots are golden brown.
  7. Add shredded cheddar cheese on top and bake for an additional 5–7 minutes until melted.
