  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp chili flakes (to taste)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Prepare all ingredients by chopping onion, mincing garlic, and grating ginger.
  2. In a large pot or Dutch oven over medium-high heat, warm the oil. Add cubed beef in batches and sear until browned on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onion until translucent (about 3-4 minutes). Add garlic and ginger; cook for an additional minute.
  4. Stir in curry paste, cumin, turmeric, and chili flakes. Pour in coconut milk and beef broth; scrape up browned bits from the bottom.
  5. Return seared beef to the pot; season with salt and pepper. Bring to a simmer, cover, and cook on low for about 2 hours until beef is tender.
  6. Stir in lime juice before serving.
