  • 1 pound boneless sirloin (cut into bite-sized chunks)
  • 1 pound ground beef
  • 1 tablespoon tallow or turkey bacon grease
  • 2 cups beef broth
  • 1 teaspoon ground cumin (optional)
  • 1 teaspoon chili powder (optional)
  • kosher salt to taste

Instructions

  1. Cook the turkey bacon until crispy; set aside.
  2. Preheat a medium Dutch oven over medium-high heat and add tallow or grease.
  3. Sear the sirloin for 2-3 minutes on each side; remove from pot.
  4. In the same pot, brown the ground beef with optional spices for about 15 minutes.
  5. Return the sirloin to the pot and add beef broth; bring to a boil.
  6. Lower heat and simmer uncovered for 30 minutes.
  7. Crumble turkey bacon into the chili, reserving some for garnish.
  8. Adjust seasoning with kosher salt before serving hot.
