Ingredients

Scale
  • 2 medium apples, peeled and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/3 cup unsalted butter, melted
  • 1/3 cup brown sugar
  • 2 tablespoons unsalted butter (for glaze)
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a small bowl, combine the diced apples with 2 tablespoons of sugar and 1 teaspoon of cinnamon. Mix well and set aside to allow the flavors to meld.
  3. In a large mixing bowl, whisk together the flour, baking powder, and salt until evenly combined.
  4. In another bowl, mix together the granulated sugar, eggs, milk, vanilla extract, and melted butter until smooth.
  5. Add the dry ingredient mixture into the wet mixture. Stir gently until just combined; avoid overmixing.
  6. Pour half of the batter into the prepared loaf pan. Layer half of the apple mixture on top, pressing gently into the batter.
  7. Pour in the remaining batter followed by the rest of the apple mixture. Use a knife to gently swirl the top layer of apples into the batter.
  8. Place in preheated oven and bake for about 55–65 minutes. Check doneness using a toothpick.
  9. Allow your bread to cool in the pan for about 15 minutes before transferring it to a wire rack.
  10. While cooling, prepare your caramel glaze by combining brown sugar, butter, and cream in a saucepan over medium heat, stirring continuously until thickened. Remove from heat and stir in vanilla extract and salt.
  11. Once cooled, drizzle warm caramel glaze generously over your Caramel Apple Fritter Bread before slicing and serving.
