  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1/3 cup maple syrup or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil or butter
  • 1 cup grated apple (about 1 medium)
  • 1 cup grated carrot (about 2 medium)
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup raisins

Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. In a large mixing bowl, combine oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together milk, maple syrup or honey, eggs, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in grated apple, grated carrot, melted coconut oil or butter, nuts, and raisins if using.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 35 to 40 minutes until golden brown on top. Allow to cool slightly before slicing.
